Sourdough Pizza Dough

This recipe is a slight modification of the fiddlehead pizza dough recipe from Sourdough: Recipes for Rustic Fermented Breads, Sweets, Savories, and More. The sonora flour gives this pizza dough a fantastic texture.

Recipe:

  • 30 g sourdough starter - refreshed is better

  • 130 g water

  • 5 g olive oil

  • pinch of salt

  • 90 g sonora flour

  • 90 g all purpose flour

  1. Mix the sourdough starter with the water and olive oil.

  2. Add the salt and flour. Mix until even.

  3. Cover and let it sit on the counter for 12 hrs.

  4. About an hour before cooking, reheat the oven to 500F with a pizza stone or a turned-over cookie sheet.

  5. Top the pizza and bake for 12 -15 minutes.

Pizza Topping Suggestions:

  • carrot top pesto, mushrooms, roasted garlic, salami, ricotta and mozzarella
